PISTACHIO ENERGY BALLS

Looking for a yummy pre-workout snack? Here it is! Pistachio energy balls are perfect light snack to go for before your workout. They won't give you uncomfortable feeling of fullness but will provide you with enough quick release energy so you can optimally perform during your workout. You only need a few ingredients and trust me, they are really good.🤤

Serving: cca. 12 balls

Preparation time: 5 minutes

Total time: 60 minutes


Ingredients:

200g pitted Medjool dates

100g peeled pistachios (half for decoration)

100g cashews

1 tsp matcha powder

Pinch of salt



INSTRUCTIONS:

  1. Weight in 50g of pistachios and put them in blender. Blend it until they are broken in small pieces, transfer to a bowl and set aside.

  2. Weight in another 50g of pistachios and the remaining ingredients. Blend it all together to get a nice paste and form it in balls. Roll each of the balls in blended pistachios for decoration, place them on a plate into the fridge for 1 hour.

  3. Enjoy them or store them for later enjoyment in airtight container.
