SWEET POTATO – LENTIL BOWL WITH ROCKET

I can easily say that sweet potato is one of my favourite vegetables and definitely on my

menu every week. With its creamy texture and sweet-spicy flavour makes it ideal for

savoury dishes that will put a smile on your face and leave you satisfied and happy.


This recipe is quick and easy to prepare as lunch or dinner, but it may take longer for your

sweet potato to bake (50-60 min.) You only need few ingredients, baking tray, cooing pot

and your favourite bowl to enjoy it.

Preparation time: 5 minutes

Cooking time: 45 - 50 minutes

Total time: 50- 55 minutes


Base Ingredients:

1 big sweet potato

1 fist of fresh wild rocket

40 g brown lentils

Salt

Pepper

Olive oil


Sauce:

1 tbs apple cyder vinegar

1 tbs soya sauce

1 tbs olive oil

1 tbs maple syrup

1 tbs whole seed mustard



INSTRUCTIONS:

  1. Preheat the oven to 200 °C.

  2. Peel the sweet potato, wash it and cut it into cubes. Place it in a bowl and mix it with some salt, pepper and olive oil. Place everything on a baking tray and bake for 45-50 minutes until tender.

  3. Weight in 40 grams of brown lentils and rinse them. Place them in a boiling water and simmer on medium temperature until tender (20-25 minutes). When cooked placed them aside and cover them to stay warm!

  4. Meanwhile prepare the sauce for the bowl. Place apple cyder vinegar, soya sauce, olive oil, maple syrup and whole seed mustard in a bowl and mix it.

  5. When the sweet potato is perfectly baked, add it to the bowl with a sauce, add cooked brown lentils and fresh wild rocket and mix all together.

  6. Serve the dish in your favourite bowl and enjoy it.

DIETARY INFO: This recipe is vegan, vegetarian friendly and gluten free.


INGREDIENT ALTERNATIVES: Instead of sweet potato you can use pumpkin, white potatoes

or mixture of parsnip and carrots. Instead of brown lentils you can use green, red, yellow or

black beluga lentils, but consider different cooking times. Instead of wild rocket, spinach

would be a great fit to the bowl.


EXTRA: If you wish you can add beans (kidney, black beans) or chickpeas to the bowl to

boost the fibre content of this bowl even more.
